1. Shared Artisan Kitchen & Major Allergen Notice
All confections showcased by Harborbell Confectionery are prepared by hand inside a single traditional coastal workshop in Camden, Maine, where copper kettles, marble cooling slabs, brass pulling hooks, crimping rollers, and wrapping counters are shared across batches.
Despite thorough hot-water sanitation between runs, trace cross-contact may occur. Guests and gift recipients with food sensitivities should note the following ingredients actively handled in our confectionery:
- Peanuts: Roasted Virginia peanuts are cooked directly in our traditional kettle brittles.
- Tree Nuts: Whole cashews, pecans, almonds, and toasted coconut flakes are used across brittle slabs and driftwood caramel squares.
- Milk & Dairy: Cultured creamery butter, heavy sweet cream, and condensed dairy solids form the base of our saltwater taffies, brittles, and caramels.
- Eggs: Pasteurized egg whites are whipped into select aerated saltwater taffy and sea-foam batches for pillowy lift.
- Soy: Non-GMO soy lecithin is used sparingly to prevent sticking on brass hooks and marble slabs.
2. Handcrafted Batch Variations & Texture Advisory
Because our confections are cooked over open flame and pulled or stretched by hand rather than stamped by automated machinery, natural variations in stripe marbling, coral or blueberry hue, twist length, and honeycomb bubble density occur from kettle lot to kettle lot.
Please enjoy hard-crack nut brittles, sixty-four-fold spun sugar ribbons, and chewy caramels mindfully. Hard-crack sugar shards and whole roasted nuts carry a firm snap, whereas pulled taffies soften gradually with warmth.
3. Coastal Humidity & Pantry Keeping Guidance
Artisan sugar work responds rapidly to ambient moisture and direct sunlight. To preserve crisp honeycomb snap in nut brittles and satin softness in wax-wrapped saltwater taffy, keep gift tins tightly closed in a dry indoor pantry between 62°F and 68°F rather than inside a refrigerator.
